What guage speaker wire do i need to wire up my subs to the box and amp?

I have 2 power acoustik p3-10w series which is 2 ohm subs that is 1000 watt rms at 2000 watt peak and a Quantum 3500watt class d amp which is 1 ohm stable.

Generally 12 gauge is the recommendation for subs. That is usually adequate unless you're running a LOT of power. I know the Quantum is no where near 3500w, and with a pair of dvc 2's you shouldn't be running it below 2 ohms anyway, so I would expect 12 to be sufficient.
